Think Pink - A Tribute to John Jacob
Think Pink! In tribute to John Jacob, a legendary folk music/ calypso arranger and composer from Tobago 🇹🇹. I had met John several years before he joined the Lydians. In addition to his love of music, John was known for his tailgating events and had a concoction known as "The Pink Drink!" While no one knows the secret ingredients, Jimmy, his BFF, said that there was rum in the beverage. John was a very kind hearted soul and I will never forget him because even though he was very sick at the time, he wanted to attend my mom's funeral. He was also a mentor to many young people and was a stalwart/cornerstone in the St. Francis Church in Belmont. The priest of that church paid a touching tribute to John last week. John's ashes were laid to rest yesterday in Tobago and I want to acknowledge that he was one of our national treasures. To Karla, Keisha, Patrick (who I reconnected with as we worked on a wonderful project in 2016!) and the rest of the family, my deepest condolences 🙏. John is resting in peace. Breakfast- cheesy garlic biscuits with pink sugar, melongene choka, strawberry 🍓 cream cheese, cranberry goat cheese 🧀 ( thanks to my friend Stephen for the cheese knife 😊 - a recent birthday gift), dragon fruit from Sheldon, my work colleague, watermelon 🍉 juice, green tea 🍵. Delicious Sunday spread! Thanks to the late, great Pat Bishop, for the name "Think Pink", it was the name of one of her famous collections. 🙏🏽I had to change the curtains too... #foodienation #foodnetwork
