Our Canadian Visit

Hi friends 🧡. We just came back from a visit to family and friends in Canada 🇨🇦. It was a fantastic trip! We were busy every single day! When we were in London, Ontario, we stayed at Ephie's home. She took great care of us every day. I have known her since 2013 when I was reading for my PhD and was going to visit Prof. Konrad, my dissertation supervisor, at the Richard Ivey Business School. Sheldon had met Ephie some years later. It was an "Eat, Pray, Love" vibe by Ephie this time. When we were leaving, she loaded us up with a lot of things including this assortment of muffins, rolls and cheese bread 🍞. Today, I made sautéed Vienna Sausage. No meat for me still so I had Monterrey Jack Cheese and strawberry yogurt. Medjool dates from Canada. Coffee. Juice. Ephie gave me the tablecloth some years ago. My inspiration for lunch was from dinner at Curtis and Jacqui last week. Curtis made parsley jasmine rice, sautéed vegetables and baked salmon in A Famous British Colombia Salmon Sauce. I checked in several groceries in London and couldn't find the sauce but I will organize to get it in the future. I made Parsley Basmati and Jasmine rice, fried plantains 😋, sautéed pigeon peas, peas and carrots 🥕 mayonnaise and baked salmon. Orange pineapple 🍍 juice! Sheldon gave me 10 out of 10!
